Meal Planning Monday

These are the meals I'm cooking for this week. It's actually becoming fun trying to find new recipes and stuff that looks yummy but, is somewhat healthy too. Actually, I think anything cooked at home verses restaurants/fast food has GOT to be better! ;-)

I hope that you all enjoy your week! I do have one favor to ask. My dad is having some tests run today. He has had blood in his urine and it has been weighing heavily on me as I'm sure it has my brother, sister, Mom, and of course my Dad. I ask you to please pray that the tests come back good and that it is just something minor. Thank you all!!

Chicken Fried Rice & Egg Drop Soup
2 boneless skinless chicken breasts (cut into cubes)
4 cups white rice (cold and at least 1 day old)
2 large eggs
2 minced garlic cloves (or more add to your taste)
1 cup frozen peas and carrots
1 white onion (diced)
½ cup soy sauce (or to your taste)
2 tablespoons oyster sauce (or to your taste)
Sesame oil (for stir frying)
Vegetable oil

Cooking Instructions:Step 1: Fry chicken pieces in oil until fully cooked or golden brown. Drain on paper towels and set aside. Beat eggs and fry in oil or butter and scramble. Remove from pan and set aside.
Step 2: Add 1 teaspoon of sesame oil and one teaspoon of vegetable oil to the wok. Stir fry diced onion and garlic for 30 seconds, add peas and carrots mix and stir fry until vegetables are done to desired tenderness.

Step 3: Add a little more oil and then add the rice and stir fry for a couple minutes. Add soy sauce and oyster sauce to the rice while stir frying.
Step 4: Add the scrambled egg and chicken pieces and mix well. Heat thoroughly and serve.



Quiche
1 1/2 cups shredded cheddar cheese
2 Tablespoons flour
1 cup milk
3 eggs slightly beaten
1/2 cup grated Parmesan cheese (freshly grated preferred over the powdered variety)
1 1/2 - 2 cups fresh broccoli florets OR ham, bacon, spinach (whatever you like)

dash of salt and black pepper
1 (9 inch) deep dish frozen unbaked pastry shell

Preheat oven to 350'F. In a medium bowl, toss cheddar cheese with flour. Add milk, eggs, Parmesan, pepper and veggies. Pour into pastry shell. Bake at 350'F for 50-60 minutes, or until set.


Sour Cream Noodle Bake - link


Cheeseburger Macaroni
1 lb lean hamburger meat
1 pkg taco seasoning
1 can Rotel tomatoes and green chilies (or petite diced tomatoes)
2 cups beef broth (or water)
1 cup elbow macaroni

Brown and drain hamburger meat. Stir in taco seasoning, Rotel, beef broth, and macaroni. Heat to boiling. Reduce heat and cover pan. Simmer 12-14 mins until macaroni is tender.

Meanwhile, make the cheese sauce….
2 Tablespoons butter
2 tbsp flour
3/4 cup milk
1 cup shredded cheddar cheese
1/2 tsp salt
1/2 tsp pepper

Melt the butter in a saucepan. Whisk in the flour and cook, whisking for 5 minutes until fragrant and light brown in color. Whisk in the milk and bring to a boil. Whisk until smooth and thickened. Remove from heat and stir in the shredded cheddar cheese until melted. Add the salt and pepper to the cheese sauce. Pour the cheese sauce over the hamburger mixture. Stir gently to combine.
