mason jar salsa

I woke up at my usual, 6:48am. I always seem to roll over and look at the clock at that exact time. Of course on school days and days that we have plans, I hurry and jump in the shower and get ready before my kids wake up.

I was all showered, dressed, hair blow dried, make up, jewelry, lunch packed, and bags ready to go by 8:00. NEITHER one of my kids were up yet. I put them both in bed at 7:40pm. That is like WAYYYYY early for my kids. Austin always goes to bed at 8:30pm, Kinley 8:00.

Austin finally woke up at 8:15, and I had to finally go in and wake up Kinley at 9:15. School starts at 9:00! We were 40 minutes late this morning. Poor girl, she felt warm when I went in and got her out of bed. I took her temperature with the temporal thermometer and it was 100.3* She has a slight fever. She's been eating normally, and acting fine. Let's hope it is nothing and will go away.

We went to Hobby Lobby, Sam's and Sprout's today. I have been meaning to purchase a bunch of mason jars for a while now. Good thing I waited, Hobby Lobby has all of their glassware 50% off now through Saturday. I'm going back and stocking up. I have a project that I want to make for Easter with mason jars! ;-)

I made a huge batch of salsa today. I just LOVE homemade salsa. I prefer it over store bought any day.

Ingredients

  • 1 can (28 Ounce) Whole Tomatoes With Juice
  • 2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
  • 1/4 cup Chopped Onion
  • 1 clove Garlic, Minced
  • 1 whole Jalapeno, Quartered And Sliced Thin
  • 1/4 teaspoon Sugar
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Ground Cumin
  • 1/2 cup Cilantro (more To Taste!)
  • 1/2 whole Lime Juice
This is the recipe I have always used - it is Pioneer Woman's. In the summer time when the tomatoes are in season and ripe, I use fresh tomatoes instead of canned. It always turns out so good. I could eat corn chips and salsa as my meal. My favorite chips are the On The Border rounds. So good!! I used two of the mason jars I bought to hold the salsa. 

I have founds so many ideas on Pinterest for mason jars. I can't wait to do more!!

My poor little sickie with me in the kitchen. She just ate her lunch and played in the kitchen while I made the salsa.

It was time after all of our running around and salsa making to go pick up Austin at school. I was so relieved to find out that he had a wonderful day, obeyed his teachers, AND even made an art project! Big steps! ;-) I had promised him a car if he listened and was really good at school today. He was thrilled when I gave it to him. Yes, I bribe my kids. Hey, it worked! ;-)


I can't believe that it is already MARCH! Seriously?! Wasn't it just Christmas? Gosh, time passes so quickly. March is a big month for Doc and I. We BOTH have birthdays. They are exactly 2 weeks apart too. Except he is turning OLD... I'm old, but not near as old as him. And there is St. Patrick's Day, and Spring Break. It's going to be a fun month!

We are so excited for daddy to be coming home!!! Except I haven't even thought about what to make for dinner. ??? Enjoy your night.
